Recipes?

This is what happens when you turn your back on your zucchini plants.



Ugh. I think I need to look for a zucchini cookbook or make one for myself.

Holy cow! I don't know...you can make lots of zuchinni bread? That would be good. Freeze it or something. Good luck! That's fun though that they got so big! ;)

I have a GREAT recipe for stuffed zucchini. I'll have to send it to you. The bigger the zucchini the better for that recipe. Those would be perfect!

Yes, Jenna is requesting we make bread today- guess it will be a big batch and Jenni send me that recipe!

We have also discovered that grilled zucchini is awesome!

My mom (Kitty Musser) has a great recipe for Zuccinni Saute, Mmmm.

1 egg, beaten
½ cup butter, softened
½ cup brown sugar
1/3 cup honey
1 tbsp. vanilla extract

-Combine in large bowl.

1 cup white flour
1 cup whole wheat flour
½ tsp baking soda
¼ tsp salt
¼ tsp cinnamon
¼ tsp nutmeg

-Combine in a separate, small bowl and blend into liquid mixture.

1 cup finely shredded zucchini
12 oz chocolate chips

-Stir these into other ingredients, mix well. Drop by spoonful onto greased baking sheet, and flatten with the back of a spoon. Bake at 350°, 10 to 15 minutes.

Another one that I haven't put up yet are zuchinni spears:

2 zuchinni, cut into 8ths lenghthwise and dipped in 2 t oil and 2 T water. Then toss with bread crumbs (3 T breadcrumbs, 1 T parmesan, 1 t oregano, 1/2 t basil, 1/4 t garlic powder)

Bake 7 minutes at 475, then flip and bake 3 more minutes. Serve with hot marinara.
